1 lb chicken breast, cut into bite-sized pieces

1 cup cornflour

1 cup buttermilk

1 cup panko bread crumbs

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Vegetable oil for frying

Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon honey

1 teaspoon lime juice

Chopped green onions for garnish

Marinate the Chicken: In a medium bowl, combine the buttermilk, garlic powder, paprika, salt, and pepper. Add the chicken pieces and ensure they are well-coated. Cover and refrigerate for at least 1 hour (or overnight for best results).

    Prepare the Coating: In a shallow dish, place the cornflour. In another shallow dish, place the panko bread crumbs.

      Coat the Chicken: Remove chicken pieces from the marinade, allowing excess to drip off. First, dip them in the cornflour, shaking off any excess, then dip in panko bread crumbs, pressing to adhere well.

        Heat the Oil: In a deep skillet or pot, heat about 2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C).

          Fry the Chicken: Working in batches, carefully add the breaded chicken pieces to the hot oil. Fry for 5-7 minutes or until golden brown and crispy, flipping halfway through for even cooking. Remove with a slotted spoon and drain on paper towels.

            Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Adjust seasoning based on your spice preference.
