Crispy Cheddar Ranch Chicken Bites

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (panko for extra crunch)

1 cup shredded sharp cheddar cheese

1 packet (1 oz) ranch dressing mix

1 tsp garlic powder

1 tsp paprika

1/2 tsp cayenne pepper (optional, for extra heat)

Salt and pepper to taste

Cooking oil (for frying)

Marinate the Chicken: In a bowl, combine the chicken pieces with half of the ranch dressing mix, a pinch of salt, and pepper. Allow the chicken to marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.

    Prepare the Breading Stations: Set up three shallow dishes:

      - In the first, place the all-purpose flour mixed with the remaining ranch dressing mix, garlic powder, paprika, salt, and pepper.

        - In the second, whisk the eggs until well beaten.

          - In the third, combine the breadcrumbs, shredded cheddar cheese, and cayenne pepper (if using).

            Coat the Chicken Bites: Dip each marinated chicken piece into the flour mixture, making sure it’s fully coated. Shake off any excess flour, then dip into the beaten eggs, and finally coat with the breadcrumb and cheese mixture. Press gently to ensure the crumbs adhere well.
