Crispy Chicken Fajita Pasta Cups

8 oz (about 225 g) penne pasta

1 lb (450 g) chicken breast, diced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, diced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 cup shredded mozzarella cheese

1 cup sour cream (for topping)

Fresh cilantro, chopped (for garnish)

1 package of wonton wrappers (approx. 30 wrappers)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced chicken and season with chili powder, cumin, garlic powder, paprika, salt, and pepper. Cook for about 5-7 minutes until chicken is fully cooked and no longer pink.

      Add the Vegetables: Once the chicken is cooked, add the sliced bell peppers and diced onion to the skillet. Sauté for an additional 4-5 minutes until the vegetables are tender.

        Combine Pasta and Chicken Mixture: In a large bowl, mix the cooked penne pasta with the chicken and vegetable mixture. Stir in half of the mozzarella cheese.

          Prepare Wonton Cups: Preheat your oven to 375°F (190°C). Spray a muffin tin with cooking spray. Gently press each wonton wrapper into the muffin tin, folding the edges down to create little cups.

            Fill the Cups: Spoon the chicken fajita pasta mixture into each wonton cup, filling generously. Top each filled cup with the remaining mozzarella cheese.

              Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the wonton wrappers are golden brown and crispy and the cheese is melted.

                Serve and Garnish: Remove from the oven and let cool for a few minutes. Serve hot, topped with a dollop of sour cream and sprinkled with fresh cilantro.
