Ingredients

2 medium sweet potatoes

2 tablespoons olive oil

1 teaspoon sea salt

½ teaspoon smoked paprika (optional)

½ teaspoon garlic powder

¼ teaspoon cayenne pepper (optional for heat)

Fresh herbs for garnish (like thyme or rosemary)

Instructions

Prep the Sweet Potatoes: Wash and peel the sweet potatoes. Using a mandoline slicer, thinly slice them into uniform chips (around 1/8 inch thick). For best results, soak the sweet potato slices in cold water for at least 30 minutes to remove excess starch, then drain and pat them dry with a kitchen towel.

Season the Chips: In a large mixing bowl, toss the sweet potato slices with olive oil, sea salt, smoked paprika, garlic powder, and cayenne pepper (if using) until evenly coated.

Air-Fry: Preheat the air fryer to 375°F (190°C). Place the sweet potato slices in a single layer in the air fryer basket, ensuring they aren’t overlapping. You may have to do this in batches depending on the size of your air fryer.

Cooking Time: Cook the sweet potato chips for 12-15 minutes, shaking the basket halfway through cooking to ensure even crispiness. Keep a close eye on them during the last few minutes, as cooking times may vary based on the thickness of the chips and air fryer model.

Cool and Garnish: Once cooked to a golden brown and crispy texture, remove the chips from the air fryer and let them cool on a wire rack. This helps maintain their crispiness. Garnish with fresh herbs if desired for an extra touch of flavor.

Serve: Enjoy your crispy, crunchy air-fried sweet potato chips as a healthy snack on their own or paired with your favorite dip!
