1 medium eggplant, sliced into ½-inch rounds

1 teaspoon salt

1 teaspoon black pepper

1 cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

2 cups marinara sauce (for dipping)

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

Olive oil spray or cooking oil for frying

Fresh basil leaves, for garnish (optional)

Prepare the Eggplant: Lay the eggplant slices on a clean kitchen towel and sprinkle with salt. Let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry with paper towels to remove any bitterness.

    Set Up Breading Station: In three separate shallow dishes, place the flour seasoned with black pepper in the first dish, beaten eggs in the second, and a mixture of panko breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, and dried basil in the third.

      Bread the Eggplant: Preheat your oven to 425°F (220°C). Dip each eggplant round first into the flour, shaking off any excess, then into the beaten eggs, and finally coat it well with the breadcrumb mixture.

        Arrange for Baking: Place the breaded eggplant bites on a baking sheet lined with parchment paper. Make sure they are spaced out to allow for even cooking.

          Bake to Perfection: Lightly spray the tops of the eggplant bites with olive oil spray or brush a little cooking oil on each. Bake in the preheated oven for about 20 to 25 minutes, flipping halfway through, until golden brown and crispy.
