1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

½ teaspoon black pepper

1 cup buttermilk

1 cup panko breadcrumbs

Oil for frying (canola or vegetable)

4 sandwich buns (brioche or whole wheat, as preferred)

1 cup shredded lettuce

1 ripe tomato, sliced

¼ cup tartar sauce (store-bought or homemade)

Prepare the Cod: Rinse the cod fillets under cold water and pat them dry with paper towels. This will ensure a crispy texture once cooked.

    Make the Breading Stations: In a shallow dish, mix together the flour, paprika, garlic powder, cayenne pepper, salt, and black pepper. In another shallow dish, pour the buttermilk. Finally, place the panko breadcrumbs in a third shallow dish.

      Bread the Cod: Dip each cod fillet first into the flour mixture, ensuring it's evenly coated. Shake off any excess flour. Next, immerse the fillets in the buttermilk, allowing the excess to drip off. Finally, coat the fillets with the panko breadcrumbs, pressing gently to adhere the crumbs well.

        Heat the Oil: In a deep skillet or frying pan, heat about 1 inch of oil over medium-high heat. To test if the oil is hot enough, sprinkle a pinch of flour into the oil; if it sizzles, it's ready.
