Ingredients

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon pepper

2 large eggs, beaten

1 cup breadcrumbs (Panko for extra crunch)

1/4 cup unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prep the Chicken: In a medium bowl, combine garlic powder, onion powder, paprika, salt, and pepper. Toss the chicken pieces in the spice mixture until evenly coated.

Breading Station: Set up three bowls. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, place the breadcrumbs.

Coat the Chicken: Dredge each piece of chicken in flour, ensuring it is fully coated. Shake off any excess, then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in breadcrumbs, pressing gently to adhere.

Heat the Butter: In a large skillet, heat the butter over medium heat until melted and bubbly. Add minced garlic and sauté for about 1 minute until fragrant, but be careful not to burn it.

Cook the Chicken: Carefully add the breaded chicken pieces to the skillet in a single layer (you may need to do this in batches). Cook for about 4-5 minutes per side or until golden brown and crispy. Ensure the internal temperature of chicken reaches 165°F (75°C).

Drain and Serve: Remove the cooked chicken bites and place them on a paper towel-lined plate to absorb excess oil. Sprinkle them with fresh parsley for a pop of color and flavor.

Enjoy: Serve the crispy garlic butter chicken bites warm with lemon wedges on the side for drizzling!
