Ingredients

1 lb Brussels sprouts, trimmed and halved

4 cloves garlic, minced

½ cup grated Parmesan cheese

3 tbsp olive oil

1 tsp salt

½ tsp black pepper

½ tsp red pepper flakes (optional for a kick)

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts, minced garlic, olive oil, salt, black pepper, and red pepper flakes (if using). Toss until the Brussels sprouts are well coated.

Roast the Brussels Sprouts: Spread the Brussels sprouts in a single layer on the prepared baking sheet, cut sides down. This helps achieve a nice crispy texture.

Bake: Roast in the preheated oven for about 20-25 minutes, shaking the pan halfway through to ensure even cooking. The sprouts should be golden and crispy on the outside.

Add the Cheese: Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese over the Brussels sprouts and return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Finishing Touches: Once done, remove from the oven and immediately add lemon zest over the top for brightness. Sprinkle chopped fresh parsley for a pop of color and freshness.

Serve: Transfer to a serving bowl and enjoy your crispy garlic Parmesan Brussels sprouts warm, as a side dish or a satisfying snack!
