2 medium zucchinis

1 cup whole wheat breadcrumbs (or gluten-free breadcrumbs)

1/2 cup grated Parmesan cheese

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon black pepper

1/2 teaspoon salt

2 large eggs

1 tablespoon olive oil

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends, then slice each zucchini into fry-shaped sticks, about 1/4-inch thick.

      Make the Coating: In a medium bowl, combine the whole wheat breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, black pepper, and salt. Mix well until evenly combined.

        Prepare the Egg Wash: In another bowl, beat the eggs together with the olive oil until well blended.

          Coat the Zucchini Fries:

            - Dip each zucchini stick into the egg wash, ensuring it is fully coated.
