2 medium zucchinis

1/2 cup whole wheat breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon paprika

1/4 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1 large egg

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Marinara sauce (for dipping, optional)

Instructions
 

Preheat Oven: Begin by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking and for easier cleanup.

    Prepare Zucchini: Wash and dry the zucchinis. Cut off the ends, then slice each zucchini into fries (about 1/4-1/2 inch thick). Make sure the pieces are roughly the same size for even cooking.

      Set Up Breading Station: In one bowl, beat the egg. In a second shallow bowl, mix together the whole wheat breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and salt.

        Bread the Zucchini Fries: Dip each zucchini fry into the beaten egg, letting any excess drip off. Then, roll it in the breadcrumb mixture, ensuring it’s evenly coated. Place each coated fry on the prepared baking sheet, making sure they are not touching.
