1 large head of cauliflower

1 cup breadcrumbs (panko for extra crunch)

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare Cauliflower: Remove the leaves from the cauliflower and slice it into 1-inch thick steaks. You should get about 3-5 steaks from a large head, depending on thickness. Try to keep them whole.

      Prepare Breading Station: In one bowl, whisk together the eggs, garlic powder, onion powder, paprika, salt, and pepper. In a second bowl, combine the breadcrumbs, shredded cheddar, grated Parmesan, and a pinch of salt and pepper.

        Bread the Steaks: Dip each cauliflower steak into the egg mixture, letting the excess drip off. Then, coat it in the breadcrumb mixture, pressing gently to ensure the coating sticks. Place the breaded steaks on the prepared baking sheet.
