Crispy Ham & Cheese Puff Pastry Stacks

1 sheet of puff pastry, thawed

6 oz deli ham, thinly sliced

6 oz cheese (Swiss, Gruyère, or cheddar), sliced or shredded

1 egg, beaten (for egg wash)

1 tablespoon Dijon mustard

1 tablespoon fresh herbs (like thyme or parsley), finely chopped

Salt and pepper, to taste

Sesame seeds or poppy seeds, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry to about 1/4 inch thick. Cut the pastry into squares or rectangles, roughly 4x4 inches. You should have about 8-10 pieces, depending on the size.

      Add Mustard and Fillings: Place half of the pastry pieces on the prepared baking sheet. Spread a thin layer of Dijon mustard on each piece. Layer the ham and cheese on top of the mustard, making sure to leave a small border around the edges for sealing.

        Create the Stack: Take the remaining pastry pieces and place them on top of the filled pieces. Press down gently to seal the edges. Use a fork to crimp the edges for a decorative touch and to ensure they are sealed well.

          Apply Egg Wash: Brush the tops of the pastry stacks with the beaten egg. This will give them a beautiful golden color while baking. Sprinkle with fresh herbs, salt, pepper, and sesame or poppy seeds if desired.

            Bake: Bake in the preheated oven for 20-25 minutes or until the pastry is puffed and golden brown.
