4 oz cream cheese, softened

1/4 cup powdered erythritol (or any keto-friendly sweetener)

1 tsp vanilla extract

1/2 tsp ground cinnamon + extra for sprinkling

1/2 cup almond flour

2 large eggs

1/2 tsp baking powder

1/4 tsp salt

Cooking spray or melted coconut oil for frying

Prepare the Cream Cheese Filling: In a mixing bowl, combine the softened cream cheese, powdered erythritol, vanilla extract, and 1/2 tsp of ground cinnamon. Blend until smooth and set aside.

    Make the Dough: In another bowl, mix the almond flour, baking powder, and salt. In a separate bowl, beat the two large eggs, then add them to the dry mixture. Stir until a dough forms.

      Roll Out the Dough: Place the dough between two sheets of parchment paper. Roll it out into a rectangle about 1/4 inch thick. Remove the top layer of parchment.

        Spread the Filling: Spread the cream cheese filling evenly over the rolled-out dough, leaving a small border around the edges.

          Roll It Up: Carefully roll the dough from one long end to the other, using the parchment to help guide it. When fully rolled, press the edges to seal.

            Slice the Roll: Using a sharp knife, slice the roll into about 1-inch thick pieces.

              Fry the Roll Ups: Heat a non-stick skillet over medium heat. Spray it with cooking spray or brush it with melted coconut oil. Place the roll ups in the skillet cut-side down. Fry for about 3-4 minutes on each side or until golden brown and crispy.

                Serve: Remove from heat and let cool slightly. Sprinkle with extra ground cinnamon and powdered erythritol if desired. Serve warm and enjoy your crispy roll ups!
