2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

    Prepare the Potatoes: Wash and scrub the baby potatoes thoroughly. Cut them in half or quarters if they are larger, ensuring they are roughly the same size for even cooking.

      Mix the Marinade: In a large mixing bowl, combine the olive oil, lemon zest, lemon juice, garlic powder, onion powder, dried thyme, dried rosemary, smoked paprika, salt, and pepper. Whisk the mixture until well combined.

        Coat the Potatoes: Add the potatoes to the bowl and toss them thoroughly in the marinade until each potato is evenly coated.

          Arrange on Baking Sheet: Line a large baking sheet with parchment paper or a silicone baking mat. Spread the potatoes out in a single layer, cut side down for extra crispiness, ensuring there is enough space between them.
