Crispy Panko Avocado Fries – So Addictive!

2 ripe avocados

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Oil for frying (vegetable or canola)

Optional: lime wedges and cilantro for serving

Instructions
 

Prepare the Avocados: Start by cutting the avocados in half, removing the pit, and peeling off the skin. Slice each avocado half into fries or wedges (about 1/2 inch thick).

    Set Up Breading Station: In three separate bowls, set up your breading station.

      - In the first bowl, place the all-purpose flour seasoned with salt and pepper.

        - In the second bowl, beat the eggs until well blended.

          - In the third bowl, combine panko breadcrumbs, garlic powder, onion powder, smoked paprika, and a pinch of salt.

            Bread the Avocado Wedges: Dredge each avocado fry in the flour, shaking off the excess. Then dip it into the beaten egg, allowing any excess to drip off. Finally, coat the fry in the panko breadcrumb mixture, pressing gently to ensure the crumbs stick well. Place the breaded fries on a plate or tray.

              Heat the Oil: In a large skillet, pour enough oil to cover the bottom (about 1/4 inch deep) and heat over medium heat until shimmering. You can test the oil readiness by dropping a small piece of bread into it; it should sizzle immediately.

                Fry the Avocado Fries: Carefully add the breaded avocado fries to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until they are golden brown and crispy. Use tongs to turn them gently.

                  Drain and Cool: Once fried, transfer the crispy avocado fries to a plate lined with paper towels to drain the excess oil. Sprinkle with a little extra salt while they are still hot.
