2 medium zucchinis

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Cooking spray or olive oil for drizzling

Optional: Marinara sauce for dipping

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup and to help with the crispiness.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends and slice each zucchini into fries, about 1/4 inch thick.

      Set Up Breading Stations: In three separate shallow bowls, place the flour in the first bowl, beat the eggs in the second bowl, and mix the breadcrumbs, grated Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper in the third bowl.

        Coat the Zucchini: Take each zucchini fry and first dip it into the flour, ensuring it’s fully coated. Shake off the excess. Next, dip it into the beaten eggs, allowing any excess to drip off. Finally, roll it in the breadcrumb and Parmesan mixture, pressing gently to adhere well.

          Arrange on Baking Sheet: Place the coated zucchini fries in a single layer on the prepared baking sheet. Make sure they don’t touch each other for optimal crispiness.

            Spray or Drizzle: Lightly spray or drizzle olive oil over the fries to help them crisp up in the oven.

              Bake: Bake in the preheated oven for 20–25 minutes or until golden brown and crispy. Flip halfway through for even cooking.
