2 medium zucchinis

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

½ teaspoon paprika

Salt and pepper, to taste

2 large eggs

Cooking spray or olive oil spray

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy clean-up.

    Prepare the Zucchini: Wash and dry the zucchinis. Slice them into thin, even rounds, about 1/4 inch thick. Make sure to keep the slices uniform for even cooking.

      Set Up the Breading Station:

        - In one bowl, crack and whisk the eggs.

          - In a separate bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper. Mix well.

            Bread the Zucchini Chips:

              - Dip each zucchini slice into the egg mixture, ensuring it’s completely coated.

                - Transfer to the breadcrumb mixture, pressing gently to adhere the mixture to both sides. Shake off any excess.

                  Arrange on Baking Sheet: Place the breaded zucchini chips in a single layer on the prepared baking sheet. Make sure they’re not overlapping for maximum crispiness. Lightly spray the tops with cooking spray or olive oil spray.

                    Bake: Bake in the preheated oven for 20-25 minutes or until golden brown and crispy. Halfway through baking, flip the chips for even cooking.

                      Cool and Serve: Once baked, remove the zucchini chips from the oven and let them cool for a few minutes. Serve warm as a snack or appetizer with your favorite dipping sauce!
