Ingredients

1 lb thinly sliced beef (such as ribeye or sirloin)

1 tablespoon olive oil

1 medium onion, thinly sliced

1 medium green bell pepper, thinly sliced

1 teaspoon minced garlic

Salt and pepper to taste

4 slices provolone cheese (or Cheez Whiz for a classic touch)

4 large flour tortillas

2 tablespoons butter, softened

Optional: sliced jalapeños for heat

Optional: hot sauce for serving

Instructions

Cook the Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the sliced onions and bell peppers. Sauté for 5-7 minutes until they are softened and caramelized. Add minced garlic and cook for an additional 1-2 minutes. Season with salt and pepper, then remove from pan and set aside.

Cook the Beef: In the same skillet, add the thinly sliced beef over medium-high heat. Season with salt and pepper. Sauté for 3-5 minutes, or until the beef is browned and cooked through. Return the sautéed onions and peppers to the skillet, combining everything well.

Assemble the Wraps: Lay a tortilla flat on a clean surface. Place a quarter of the beef mixture in the center of the tortilla. Top with a slice of provolone cheese. For an extra cheesy experience, you can drizzle some Cheez Whiz over the beef before adding the cheese.

Fold the Wrap: Fold in the sides of the tortilla over the filling, then roll tightly from the bottom to the top. Do this for each of the tortillas.

Grill the Wraps: Heat a grill pan or large skillet over medium heat and add 1 tablespoon of butter. Place the wraps seam-side down in the pan. Grill for 2-3 minutes until crispy and golden, then flip and add the remaining butter to the other side, grilling for another 2-3 minutes.

Serve: Once both sides are crispy and golden brown, remove wraps from the skillet. Slice each wrap in half diagonally, and serve them hot with sliced jalapeños and hot sauce on the side if desired.
