Crock Pot Chicken and Stuffing

4 boneless, skinless chicken breasts

1 (10.5 oz) can cream of chicken soup

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

2 cups herb stuffing mix

1/4 cup unsalted butter, melted

1/2 cup diced celery

1/2 cup diced onion

1 cup frozen mixed vegetables (peas, carrots, corn)

Instructions
 

Prepare the Chicken: Season the chicken breasts with garlic powder, onion powder, thyme, rosemary, salt, and pepper. Place them in the bottom of the crockpot.

    Make the Base: In a mixing bowl, combine the cream of chicken soup and chicken broth. Stir until well combined. Pour this mixture over the seasoned chicken in the crockpot.

      Add Vegetables: Scatter the diced celery, onion, and frozen mixed vegetables evenly over the top of the chicken and soup mixture.

        Prepare the Stuffing: In another bowl, combine the herb stuffing mix and melted butter. Toss until the stuffing is well-coated in butter.

          Layer the Stuffing: Evenly spread the stuffing mixture over the top of the vegetable layer in the crockpot.

            Cook It Up: Cover the crockpot with its lid and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
