Crockpot Chicken Corn Chowder

1 lb boneless, skinless chicken breasts

4 cups frozen or fresh corn kernels

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced

3 cups chicken broth

1 cup heavy cream

1 cup milk

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley or chives for garnish (optional)

Instructions
 

Prep the Chicken: In a skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, and sear them for about 4-5 minutes on each side until golden brown. This adds extra flavor to the chowder. Remove from skillet and set aside.

    Combine Ingredients: In the crockpot, add the diced onion, minced garlic, diced potatoes, corn kernels, dried thyme, smoked paprika, and chicken broth. Stir to combine.

      Add Chicken: Place the seared chicken breasts on top of the mixture in the crockpot. Cover and cook on low for 6-8 hours or on high for 4-5 hours until the chicken is cooked through and easily shreds.

        Shred Chicken: Once the chicken is cooked, remove it from the crockpot and shred it using two forks. Return the shredded chicken to the chowder.

          Stir in Cream & Milk: Stir in the heavy cream and milk into the crockpot and mix well. Allow it to heat through for an additional 20-30 minutes on high. Adjust seasoning with more salt and pepper if needed.

            Serve: Ladle the chowder into bowls and garnish with fresh parsley or chives if desired. Enjoy the cozy flavors!
