Crockpot Chili Cheese Potato Skillet

4 medium-sized russet potatoes, diced

1 lb ground beef or turkey (or a vegan alternative)

1 can (15 oz) chili beans, drained

1 can (15 oz) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

1 medium onion, diced

3 cloves garlic, minced

2 cups shredded cheddar cheese

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

1/4 cup chopped green onions (for garnish)

1/4 cup sour cream (optional, for serving)

Instructions
 

Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

    Brown the Meat: Add the ground beef or turkey to the skillet. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat.

      Combine in Crockpot: Transfer the cooked meat and onion mixture to a crockpot. Add the diced potatoes, chili beans, diced tomatoes, corn, chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine.

        Cook It Slow: Cover the crockpot and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the potatoes are tender and all flavors meld together beautifully.

          Add Cheese: About 15 minutes before serving, stir in 1 1/2 cups of shredded cheddar cheese. Allow it to melt and become gooey, giving the dish a creamy, cheesy texture.

            Serve: Once cooked, give the chili cheese potato skillet a good stir. Serve in bowls, topped with the remaining cheese, chopped green onions, and a dollop of sour cream if desired.
