Ingredients

4 large yellow onions, thinly sliced

4 cloves garlic, minced

4 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

1 teaspoon dried thyme

2 bay leaves

8 cups beef broth

1 cup dry white wine (optional, replace with more broth if desired)

1 tablespoon Worcestershire sauce

Salt and pepper to taste

1 baguette, sliced into rounds

2 cups shredded Gruyère cheese

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Onions: In a large skillet over medium heat, melt the butter and olive oil. Add the sliced onions and sprinkle with sugar. Cook until the onions are caramelized and golden brown, about 20-25 minutes, stirring occasionally.

Add Garlic and Herbs: Once the onions are caramelized, add the minced garlic, thyme, and bay leaves. Cook for an additional 2-3 minutes until fragrant.

Transfer to Crockpot: Transfer the onion mixture into a crockpot. Pour in the beef broth, white wine (if using), and Worcestershire sauce. Season with salt and pepper to taste. Stir well to combine.

Cook on Low: Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, allowing the flavors to meld beautifully.

Prepare Bread: About 30 minutes before serving, preheat your oven to 350°F (175°C). Arrange the baguette slices on a baking sheet and toast in the oven until golden brown, about 10-15 minutes.

Serve the Soup: Once the soup is ready, remove the bay leaves. Ladle the soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and generously sprinkle with Gruyère cheese.

Melt the Cheese: Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted, bubbly, and slightly browned.

Garnish & Enjoy: Remove from oven, let cool slightly, and garnish with chopped parsley. Serve immediately and enjoy the savory goodness!
