Ingredients

1 lb ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (24 oz) chili sauce

1 cup beef broth

2 tsp chili powder

1 tsp cumin

1 tsp oregano

Salt and pepper to taste

8 oz spaghetti, broken into thirds

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Base: In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.

Sauté Aromatics: Add the diced onion and minced garlic to the meat, cooking until the onion is soft and translucent, about 3-4 minutes.

Mix Ingredients in Crockpot: Transfer the meat mixture to a crockpot. Add the diced tomatoes (with juice), kidney beans, black beans, chili sauce, beef broth, chili powder, cumin, oregano, salt, and pepper. Stir well to combine.

Add Spaghetti: Break the spaghetti into thirds and add it to the crockpot, stirring gently to ensure it is submerged in the sauce.

Cook: Cover the crockpot and cook on LOW for about 6-7 hours or on HIGH for 3-4 hours until the spaghetti is cooked and the chili is bubbly.

Add Cheese: About 30 minutes before serving, sprinkle the shredded mozzarella and grated Parmesan cheese over the top. Cover and allow the cheese to melt.

Serve: Once the cheese is melted and bubbly, give the chili bake a good stir. Garnish with chopped parsley before serving. Enjoy your hearty meal!
