8 slices of thick-cut bread (preferably brioche or pain de mie)

4 slices of Gruyère cheese (or Emmental)

4 slices of ham (preferably black forest or prosciutto)

2 tablespoons Dijon mustard

1 cup grated Gruyère cheese (for topping)

4 tablespoons unsalted butter (softened)

2 tablespoons all-purpose flour

1 cup whole milk

1/4 teaspoon nutmeg (freshly grated if possible)

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish, optional)

Prepare the Béchamel Sauce: In a medium saucepan over medium heat, melt 2 tablespoons of butter. Once melted, add the flour and whisk continuously for about 2 minutes until it forms a smooth paste (roux). Gradually add the milk, whisking constantly until thickened and bubbly. Stir in the nutmeg, salt, and pepper. Remove from heat and set aside.

    Assemble the Sandwiches: On one side of each slice of bread, spread a layer of Dijon mustard. Layer 1 slice of ham and 1 slice of Gruyère on 4 of the slices. Top each with the remaining 4 slices of bread to form sandwiches.

      Cook the Sandwiches: In a skillet over medium heat, melt the remaining 2 tablespoons of butter. Carefully place the assembled sandwiches in the skillet and cook until golden brown on the bottom, about 3-4 minutes. Flip the sandwiches and brown the other side.

        Add Béchamel: Once both sides are crispy and golden, remove the sandwiches from the skillet. Place them on a baking sheet and generously spoon the béchamel sauce over the top. Then, sprinkle the reserved grated Gruyère on each sandwich.

          Bake: Preheat your oven to 400°F (200°C). Bake the sandwiches in the preheated oven for about 10-12 minutes, or until the cheese is bubbly and golden.

            Serve: Remove from the oven and let cool for a minute. Garnish with chopped parsley if desired. Slice in half and serve warm.
