Ingredients
  

2 medium cucumbers, thinly sliced

1 red bell pepper, julienned

1 yellow bell pepper, julienned

1 small red onion, thinly sliced

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 1 lime

2 tablespoons olive oil

1 tablespoon honey (or agave syrup for a vegan option)

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the sliced cucumbers, julienned red and yellow bell peppers, sliced red onion, and halved cherry tomatoes.

    Add the chopped cilantro to the bowl and gently toss all the vegetables together.

      In a small separate bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.

        Pour the dressing over the salad and toss gently to coat all the ingredients evenly.

          If using, sprinkle the feta cheese over the top just before serving.

            Let the salad sit for about 10 minutes at room temperature for the flavors to meld, or refrigerate for up to 1 hour before serving.
