Ingredients

1 lb large shrimp, peeled and deveined

2 medium cucumbers, thinly sliced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1/4 cup fresh cilantro, chopped

1 avocado, diced

2 tablespoons olive oil

2 tablespoons fresh lime juice

1 teaspoon honey

Salt and pepper to taste

1/2 teaspoon red pepper flakes (optional, for heat)

Instructions

Prepare the Shrimp: In a pot of boiling salted water, add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain and transfer to an ice bath to stop the cooking process. Once cooled, drain again and set aside.

Make the Dressing: In a small bowl, whisk together olive oil, lime juice, honey, salt, pepper, and red pepper flakes until well combined.

Combine Ingredients: In a large bowl, combine the cooked shrimp, cucumber slices, cherry tomatoes, red onion, cilantro, and avocado.

Dress the Salad: Pour the dressing over the salad mixture and gently toss to coat all ingredients evenly.

Chill and Serve: For best flavor, let the salad chill in the refrigerator for about 15-30 minutes before serving, allowing the flavors to meld. Serve chilled.
