For the brownie layer:

1 cup unsalted butter, melted

1 1/4 cups granulated sugar

1 cup packed brown sugar

1 cup cocoa powder

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon salt

1 cup chopped Oreo cookies (about 10 cookies)

For the cheesecake layer:

16 oz cream cheese, softened

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

10 crushed Oreo cookies (for topping)

Instructions
 

Preheat your oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Make the brownie layer: In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Whisk until smooth. Stir in the cocoa powder until well mixed. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

      Prepare the dry ingredients: In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chopped Oreo cookies until evenly distributed.

        Bake the brownie base: Pour the brownie batter into the prepared pan, spreading it out evenly. Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

          Prepare the cheesecake layer: While the brownie layer is baking, prepare the cheesecake mixture. In a mixing bowl, beat the softened cream cheese with granulated sugar until smooth and creamy. Add in the egg and vanilla extract, mixing until fully incorporated.

            Assemble the cheesecake layer: Once the brownie layer has finished baking, remove it from the oven and drop spoonfuls of the cheesecake mixture on top of the brownies. Use a butter knife to gently swirl the cheesecake layer into the brownie layer for a marbled effect.
