For the Mac & Cheese Filling:

1 cup elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup milk

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon grated Parmesan cheese

For the Sushi Rolls:

4 sheets of nori (seaweed)

1 ½ cups sushi rice

2 cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

For Breading and Frying:

1 cup breadcrumbs (panko recommended)

2 large eggs

Oil for frying (vegetable or canola)

Instructions
 

Make the Mac & Cheese Filling:

    - Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      - In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden.

        - Gradually pour in the milk, whisking continuously until the mixture thickens (about 3-5 minutes).

          - Stir in the shredded cheddar cheese, garlic powder, onion powder, salt, pepper, and Parmesan. Mix until smooth and cheese is melted.

            - Fold in the cooked macaroni. Remove from heat and allow to cool.

              Prepare the Sushi Rice:

                - Rinse sushi rice under cold water until water runs clear. Drain.

                  - In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low and cover. Cook for 18-20 minutes until rice is tender.

                    - In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is done, remove it from heat and gently mix in the vinegar mixture. Allow it to cool.

                      Assemble the Sushi Rolls:

                        - On a bamboo sushi mat or a clean surface, lay a sheet of nori, shiny side down.

                          - Wet your hands to prevent sticking, and take a handful of sushi rice (about ½ cup) and spread it evenly over the nori, leaving about 1 inch of space at the top.

                            - Spoon a line of the mac & cheese filling alongside the bottom edge of the rice-covered nori.

                              - Carefully roll the sushi mat away from you, tucking the filling and rice while rolling tightly. Seal the edge of the nori with a bit of water.

                                Prepare for Frying:

                                  - Slice the sushi roll into 1-inch pieces.

                                    - Set up a breading station: in one bowl, place the breadcrumbs; in another bowl, beat the eggs.

                                      - Dip each sushi piece into the egg wash, then coat with breadcrumbs.

                                        Deep-Fry the Rolls:

                                          - Heat oil in a deep-fryer or large skillet to 350°F (175°C).

                                            - Fry the sushi rolls in batches until golden brown, approximately 2-3 minutes per side. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

                                              Serve:

                                                - Serve the deep-fried mac & cheese sushi rolls with soy sauce, spicy mayo, or sriracha for a delightful twist on this global favorite!
