Ingredients

For the Crust:

2 ½ cups all-purpose flour

1 tsp salt

1 tsp sugar

1 cup cold unsalted butter, diced

6-8 tbsp ice water

For the Filling:

1 lb ground beef

1 cup pepperoni slices

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 tsp Italian seasoning

1 tsp paprika

Salt and pepper, to taste

1 large egg, beaten (for egg wash)

Instructions

Make the Crust:

    - In a large bowl, mix the flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.

      - Stir in ice water, one tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

        Prepare the Filling:

          - In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain any excess fat.

            - Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent. Stir in the pepperoni, Italian seasoning, paprika, and season with salt and pepper. Cook for an additional 2-3 minutes, then remove from heat.

              Assemble the Pie:

                - Preheat your oven to 375°F (190°C). Roll out one of the dough discs on a floured surface into a circle large enough to fit your pie pan.

                  - Place the rolled crust in the bottom of the pie pan, pressing it firmly. Add half of the mozzarella and cheddar cheese to the crust.

                    - Layer the beef and pepperoni mixture over the cheese, then top with the remaining cheese. Roll out the second dough disc and place it over the filling. Cut slits in the top for ventilation and crimp the edges to seal the pie.

                      Bake:

                        - Brush the top of the pie with beaten egg for a golden finish. Place the pie on a baking sheet and bake for 40-45 minutes, or until the crust is golden brown and the cheese is bubbly.

                          Serve:

                            - Remove from the oven and allow to cool for 10 minutes before slicing. Serve hot, with a side salad or dipping sauces if desired.
