Ingredients

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

4 medium potatoes, diced

4 cups beef broth

1 cup milk

1 cup shredded cheddar cheese

1 cup frozen corn (or fresh)

1 tablespoon Worcestershire sauce

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, for garnish (optional)

Instructions

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent and fragrant.

Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes, and drain excess grease if necessary.

Stir in the diced potatoes, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring the mixture to a boil.

Reduce heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.

Once the potatoes are cooked through, gradually stir in the milk and shredded cheddar cheese, mixing until the cheese is melted and the soup is creamy.

Add the frozen corn, stirring to combine, and let it heat through for an additional 5 minutes.

Taste and adjust seasoning if necessary.

Serve hot, garnished with fresh parsley if desired.
