1 lb flank steak

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 small red onion, thinly sliced

1 bell pepper (any color), thinly sliced

2 tablespoons fresh cilantro, chopped (optional)

Sour cream and salsa, for serving

Prep the Steak: Start by marinating the flank steak. In a small bowl, mix together olive oil, garlic powder, smoked paprika, cumin, salt, and pepper. Rub this mixture all over the steak and let it marinate for at least 15 minutes (30 minutes is ideal for deeper flavor).

    Grill the Steak: Heat a grill pan or outdoor grill over medium-high heat. Once hot, place the marinated steak on the grill. Cook for about 4-5 minutes on each side for medium-rare, adjusting time based on your preferred doneness. After grilling, let the steak rest for 5 minutes before slicing it thinly against the grain.

      Sauté the Veggies: In the same skillet or pan, add the sliced red onion and bell pepper. Sauté for about 3-4 minutes, or until the vegetables are tender and slightly caramelized. Remove from heat and set aside.

        Assemble the Quesadillas: On one half of each flour tortilla, layer a generous portion of shredded cheddar and Monterey Jack cheese, followed by a portion of the grilled steak slices, sautéed onions and peppers, and a sprinkle of fresh cilantro (if using).
