Ingredients

For the Cookies:

1 cup rolled oats

1 cup all-purpose flour

½ teaspoon baking powder

½ teaspoon baking soda

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup unsalted butter, softened

½ cup brown sugar, packed

½ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

For the Filling:

½ cup unsalted butter, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (adjust for desired consistency)

Optional Add-ins:

½ cup chocolate chips

½ cup raisins or chopped nuts

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Mix Dry Ingredients: In a medium bowl, combine the rolled oats, flour, baking powder, baking soda, cinnamon, and salt. Whisk together until well blended.

Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and smooth. This should take about 3-4 minutes using an electric mixer.

Add Egg and Extract: Mix in the egg and vanilla extract until fully incorporated.

Combine Wet and Dry: Gradually add the dry ingredient mixture to the butter-sugar mixture, mixing until just combined. If desired, fold in the optional chocolate chips or raisins/nuts.

Scoop the Dough: Using a tablespoon or cookie scoop, drop rounds of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and the centers are set but still soft. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.

Prepare the Filling: While the cookies are cooling, make the filling. In a mixing bowl, beat the softened butter until creamy, then gradually add the powdered sugar. Mix in the vanilla extract and enough milk to achieve a smooth and spreadable consistency.

Assemble the Cookies: Once the cookies are completely cooled, spread a generous amount of filling on the flat side of one cookie and top it with another cookie, pressing gently to create a sandwich. Repeat until all cookies are filled.

Serve and Enjoy: Enjoy your homemade oatmeal sandwich cookies as a delightful treat, or store them in an airtight container for up to a week!
