2 cups coconut milk

1 cup glutinous rice flour

1/2 cup sugar (preferably palm sugar)

1/2 teaspoon salt

1 cup shredded coconut (unsweetened)

1 tablespoon vanilla extract

1/4 cup water

1 tablespoon tapioca starch (for dusting)

Optional: fresh mango slices for serving

Prepare the Steaming Setup: Fill a large pot with water and bring it to a simmer. Prepare a steaming basket or a heat-safe dish that fits in the pot, lined with parchment paper.

    Mix the Coconut Mixture: In a mixing bowl, combine coconut milk, glutinous rice flour, sugar, and salt. Mix until there are no lumps, ensuring the sugar is fully dissolved.

      Add Coconut and Flavor: Stir in the shredded coconut and vanilla extract, mixing until well combined.

        Fill the Steaming Dish: Pour the coconut mixture into the prepared steaming dish, smooth the top with a spatula, and allow it to settle.

          Steam the Mixture: Place the dish in the steaming basket or pot. Cover with a lid (or with aluminum foil if using a heat-safe dish) to prevent condensation from dripping. Steam for 30-35 minutes, or until the mixture is set and slightly firm to the touch. A toothpick inserted should come out clean.

            Cool Down: Once done, remove the dish from the pot and let it cool at room temperature for about 10 minutes. Then, refrigerate for at least 1 hour to firm up further.
