Ingredients
  

1 cup unsalted butter, softened

1 cup powdered sugar, plus extra for dusting

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 cup finely chopped almonds

1/4 teaspoon salt

1/2 teaspoon almond extract

Optional: 1/4 teaspoon cinnamon for added flavor

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream the softened butter and 1 cup of powdered sugar until light and fluffy.

      Stir in the vanilla extract and almond extract, mixing until completely incorporated.

        Gradually add in the flour, salt, and chopped almonds, stirring until a soft dough forms. If using, add cinnamon for an extra hint of spice.

          Using your hands, scoop out small portions of dough (about 1 tablespoon each) and roll them into balls, placing them on the prepared baking sheet about 2 inches apart.

            Bake in the preheated oven for 15-18 minutes, or until the cookies are lightly golden at the bottom but still pale on top.

              Allow cookies to cool on the baking sheet for 5 minutes before rolling them in powdered sugar while they are still warm. Transfer them to a wire rack to cool completely.

                Once cooled, you can dust them with an additional layer of powdered sugar for a beautiful snowy effect.
