1 can (14.75 oz) wild-caught salmon, drained and flaked

1/2 cup plain breadcrumbs (or gluten-free breadcrumbs)

1/4 cup finely chopped onion

1/4 cup finely chopped bell pepper (red or green)

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg, beaten

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1/2 teaspoon dried dill

Salt and pepper, to taste

Olive oil or cooking spray, for frying

Lemon wedges, for serving (optional)

Instructions
 

In a large mixing bowl, combine the drained salmon, breadcrumbs, chopped onion, bell pepper, parsley, garlic, and dill. Mix until well combined.

    Add the beaten egg, Dijon mustard, Worcestershire sauce, salt, and pepper to the mixture. Stir until everything is evenly incorporated.

      Let the mixture rest for about 10-15 minutes to allow the breadcrumbs to absorb some moisture, making the mixture easier to shape.

        Preheat a non-stick skillet over medium heat. Add a couple of tablespoons of olive oil or spray with cooking spray.

          Using your hands, form the salmon mixture into patties, roughly 2-3 inches in diameter. Gently place them in the heated skillet.

            Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through. Avoid overcrowding the skillet; you may need to cook them in batches.

              Once cooked, remove the patties from the skillet and place them on a paper towel-lined plate to absorb any excess oil.

                Serve the salmon patties warm with lemon wedges on the side, and enjoy them in a sandwich, salad, or on their own!
