4 large eggs

1 cup bean sprouts

1/2 cup shredded carrots

1/2 cup finely chopped green onions

1/2 cup diced bell pepper (any color)

1/4 cup cooked and diced shrimp or chicken (optional)

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

Salt and pepper, to taste

2 tablespoons vegetable oil (for frying)

Optional: Hot sauce for serving

Prepare the Filling: In a large mixing bowl, beat the eggs gently until well combined. Add bean sprouts, shredded carrots, chopped green onions, diced bell pepper, and shrimp or chicken (if using). Mix well.

    Season the Mixture: Stir in the soy sauce, oyster sauce, sesame oil, salt, and pepper to taste. Ensure everything is evenly coated.

      Heat the Pan: In a non-stick skillet or frying pan, heat 1 tablespoon of vegetable oil over medium heat.

        Cook the Egg Foo Young: Pour a ladle full of the egg mixture into the pan, spreading it out slightly to form a pancake. Cook for about 3-4 minutes until the edges begin to set and the bottom is golden brown.

          Flip and Finish: Carefully flip the pancake using a spatula, and cook for an additional 2-3 minutes on the other side until golden and cooked through. Transfer to a plate. Repeat with the remaining egg mixture, adding more oil to the pan as needed.

            Serve: Serve the Egg Foo Young hot, drizzled with extra soy sauce or hot sauce if desired.
