4 large flour tortillas

4 large eggs

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage (or diced ham)

½ cup diced bell peppers (red, green, or a mix)

¼ cup diced onions

2 tablespoons olive oil (or butter)

Salt and pepper, to taste

Salsa or hot sauce, for serving

Fresh cilantro or chives, for garnish (optional)

Instructions
 

Prep the Filling: In a medium bowl, whisk together the eggs, salt, and pepper. Add the crumbled sausage, diced bell peppers, and onions. Mix until well combined.

    Cook the Eggs: In a large skillet over medium heat, add 1 tablespoon of olive oil. Pour in the egg mixture and scramble, stirring occasionally until the eggs are just cooked (about 3-4 minutes). Remove from heat.

      Assemble Quesadillas: Spread half of the cooked filling over one side of two tortillas. Sprinkle half of the shredded cheese on top of the filling. Fold the tortillas over to create a half-moon shape.

        Cook the Quesadillas: Wipe out the skillet and add the remaining tablespoon of olive oil over medium heat. Place the folded quesadillas in the skillet. Cook for 3-4 minutes on each side or until they are golden brown and the cheese has melted. If necessary, cook in batches.
