1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

3 cups beef broth

2 medium potatoes, peeled and diced

1 cup carrots, diced

1 cup celery, diced

2 tablespoons soy sauce

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon paprika

1 cup shredded cheddar cheese

1 cup milk

Salt and pepper to taste

Optional: chopped green onions for garnish

Instructions
 

In a large pot over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess grease.

    Stir in the beef broth, diced potatoes, carrots, and celery. Add the soy sauce, onion powder, garlic powder, paprika, and season with salt and pepper. Bring the mixture to a boil.

      Reduce the heat, cover the pot, and let simmer for about 20 minutes, or until the vegetables are tender.

        Once the vegetables are cooked, stir in the milk and shredded cheddar cheese. Cook over low heat, stirring occasionally, until the cheese is melted and the soup is creamy, about 5 minutes.

          Taste and adjust seasonings if necessary. Serve hot, garnished with chopped green onions if desired.
