Ingredients
  

12 ounces spaghetti or fettuccine

2 cups cooked chicken, shredded or diced

1 cup sliced mushrooms

1 cup frozen peas (thawed)

1/2 cup chopped onion

3 cloves garlic, minced

1/4 cup all-purpose flour

3 cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried thyme

1/2 teaspoon black pepper

Salt to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent, about 3-4 minutes. Add the sliced mushrooms and cook until soft and browned, about another 5 minutes.

      Make the Sauce: Sprinkle the flour over the sautéed vegetables and stir for about 1 minute. Gradually pour in the chicken broth while continuously stirring to avoid lumps. Bring to a simmer and let cook until slightly thickened, about 3-5 minutes. Stir in the heavy cream, and add the thyme, black pepper, and salt. Mix well.

        Combine Ingredients: Add the cooked chicken, peas, and drained pasta into the sauce. Stir gently to combine everything evenly.

          Cheese It Up: Remove the skillet from the heat and mix in the cheddar and Parmesan cheeses, reserving a little cheddar for topping later. Ensure everything is evenly incorporated.

            Bake: Preheat your oven to 350°F (175°C). Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle the reserved cheddar cheese on top. Bake in the preheated oven for 20-25 minutes, or until bubbly and golden on top.

              Serve: Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
