Ingredients
  

1 pound ground beef or turkey

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10.5 oz) cream of mushroom soup

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 package (2.5 oz) tortilla chips

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Meat: In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.

      Add Ingredients: Stir in the black beans, corn, cream of mushroom soup, diced tomatoes, chili powder, garlic powder, onion powder, salt, and pepper. Mix well until everything is combined.

        Layer in Baking Dish: In a greased 9x13-inch baking dish, spread half of the tortilla chips evenly across the bottom. Pour half of the meat mixture over the chips, then sprinkle half of the cheddar cheese on top. Repeat with the remaining chips, meat mixture, and finish with the rest of the cheese.

          Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.

            Garnish: Remove from the oven and let it cool for a few minutes. Top with fresh cilantro or green onions if desired.

              Serve: Serve warm and enjoy this hearty cowboy casserole with your favorite sides or a fresh salad.
