1 lb (450g) boneless, skinless chicken breasts, diced

1 medium onion, finely chopped

2 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, diced

4 cups (950ml) chicken broth

1 cup (240ml) heavy cream

1 tsp dried thyme

1 tsp dried parsley

Salt and pepper to taste

2 tbsp olive oil

1 cup (150g) frozen peas

Optional: Fresh parsley for garnish

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and diced celery, sautéing for about 5 minutes until softened. Add the minced garlic, cooking for another minute until fragrant.

    Cook the Chicken: Add the diced chicken to the pot and cook, stirring occasionally, until the chicken is no longer pink, about 5-7 minutes.

      Add Vegetables and Broth: Stir in the sliced carrots, chicken broth, dried thyme, dried parsley, salt, and pepper. Bring the mixture to a boil, then reduce heat to medium-low and let it simmer for 15 minutes.

        Incorporate Cream: After simmering, pour in the heavy cream and stir well. Add the frozen peas and simmer for an additional 5 minutes, allowing the soup to thicken slightly.

          Taste and Adjust: Taste the soup and adjust the seasonings if needed. If it’s too thick, add a little more chicken broth until you reach your desired consistency.
