1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon lemon zest

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Grill/Oven: Preheat your grill to medium-high heat (or preheat your oven to 400°F/200°C).

    Prepare the Garlic Butter Sauce: In a small bowl, combine the melted butter, minced garlic, lemon juice, lemon zest, smoked paprika, red pepper flakes, salt, and pepper. Whisk until mixed well.

      Prepare the Foil Packets: Cut 4 large sheets of aluminum foil, approximately 12x18 inches each. Place a handful of cherry tomatoes and corn in the center of each sheet.

        Add the Shrimp: Evenly distribute the shrimp over the tomatoes and corn on each foil packet. Drizzle the garlic butter sauce generously over the shrimp and vegetables.

          Seal the Packets: Bring the sides of the foil together and fold them over to create a sealed packet. Make sure they are tightly sealed to prevent juice from leaking out during cooking.

            Cook the Packets: Place the foil packets on the grill or a baking sheet in the oven. Cook for about 10-12 minutes or until the shrimp are pink and cooked through.
