Ingredients

1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) diced tomatoes

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried oregano

1 teaspoon paprika

2 cups elbow macaroni

1 cup shredded cheddar cheese

Salt and pepper to taste

Fresh parsley (for garnish)

Instructions

In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it apart with a wooden spoon until fully cooked. Drain any excess grease.

Add the chopped onion, garlic, and bell pepper to the pot. Sauté for about 5 minutes until the vegetables are softened.

Stir in the diced tomatoes (with their juice), beef broth, Worcestershire sauce, oregano, paprika, and season with salt and pepper. Bring the mixture to a simmer.

Add the elbow macaroni to the pot, stirring well to combine. Reduce the heat to low, cover, and let it cook for 10-12 minutes, or until the macaroni is al dente, stirring occasionally to prevent sticking.

Once the macaroni is cooked, remove the pot from heat and stir in the shredded cheddar cheese until melted and combined.

Serve hot, garnished with fresh parsley for a pop of color.
