1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

3 cloves garlic, minced

1 tbsp dried oregano

1 tsp dried thyme

1 tsp paprika

Salt and black pepper, to taste

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

For the Lemon Rice:

1 cup long-grain white rice

2 cups chicken broth or water

Zest of 1 lemon

2 tbsp lemon juice (freshly squeezed)

2 tbsp olive oil

1/2 tsp salt

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken Souvlaki:

    - In a large mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, thyme, paprika, salt, and pepper.

      - Add the chicken cubes to the marinade and toss until well coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for maximum flavor).

        Cook the Lemon Rice:

          - In a medium saucepan, heat olive oil over medium heat. Add the rice and toast for about 2-3 minutes, stirring constantly until lightly golden.

            - Add chicken broth or water, lemon zest, lemon juice, and salt. Bring to a boil, then reduce the heat to low. Cover and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.

              Prepare the Souvlaki Skewers:

                - Preheat your grill or grill pan to medium-high heat. Thread the marinated chicken cubes onto skewers, leaving a little space between each piece for even cooking.
