Easy Hamburger Potato Casserole

1 lb ground beef

4 medium potatoes, thinly sliced

1 medium onion, diced

2 cups shredded cheddar cheese

1 cup sour cream

1 cup beef broth

2 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

1 cup frozen mixed vegetables (peas, carrots, corn)

Olive oil for cooking

Fresh parsley, for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté until translucent.

      Add the ground beef to the skillet. Cook until browned, breaking it apart as it cooks, and drain excess fat if necessary.

        Stir in the garlic powder, onion powder, salt, and pepper. Remove the beef mixture from the heat and set aside.

          In a large mixing bowl, combine the sour cream and beef broth. Mix well to create a creamy sauce.

            In a greased 9x13-inch baking dish, start layering: Place half of the sliced potatoes on the bottom, then half of the beef mixture, followed by half of the mixed vegetables.

              Pour half of the creamy sauce over this layer and sprinkle with a third of the cheddar cheese.

                Repeat the layers with the remaining potatoes, beef mixture, mixed vegetables, sauce, and top with the remaining cheddar cheese.

                  Cover the casserole with aluminum foil and bake in the preheated oven for 35 minutes.

                    Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbling and the potatoes are fork-tender.

                      Once baked, allow resting for 5-10 minutes before serving. Garnish with fresh parsley if desired.
