Easy Kielbasa Potato Soup for Busy Nights

1 pound kielbasa, sliced into half-moons

4 large potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup milk or heavy cream

2 cups baby spinach or kale, roughly chopped

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Optional: grated cheese and fresh herbs for garnish

Instructions
 

Sauté the Kielbasa: In a large pot, heat olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 5-7 minutes. Remove the kielbasa from the pot and set aside.

    Cook the Aromatics: In the same pot, add the onion and garlic. Sauté for 3-4 minutes, until the onion is translucent.

      Add the Potatoes: Stir in the diced potatoes, dried thyme, and paprika. Cook for an additional 2-3 minutes, allowing the flavors to meld.

        Pour in the Broth: Add the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.

          Blend if Desired: For a creamier texture, use an immersion blender to blend part of the soup directly in the pot. Alternatively, you can transfer half of the soup to a blender, blend until smooth, and return to the pot.

            Finish the Soup: Stir in the milk or heavy cream and add the sautéed kielbasa back into the pot. Then add the chopped spinach or kale. Simmer for another 5 minutes until the greens are wilted. Season with salt and pepper to taste.

              Serve: Ladle the soup into bowls. Garnish with grated cheese or fresh herbs if desired. Enjoy!
