Ingredients

4 large russet potatoes, peeled and grated

1 cup shredded cheddar cheese

1 cup diced cooked bacon (or vegetarian alternative)

1/2 cup green onions, chopped

1/2 cup sour cream

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Optional: jalapeños for a spicy kick

Instructions

Prepare the Potatoes: After grating the potatoes, place them in a clean kitchen towel and squeeze out excess moisture. This step is crucial for achieving crispiness!

Season the Potatoes: In a large bowl, combine the grated potatoes, garlic powder, onion powder, salt, and pepper. Mix well to ensure even seasoning.

Cook the Hash Browns: Heat olive oil in a large skillet over medium-high heat. Add the grated potato mixture into the skillet, pressing down firmly to create an even layer. Let it cook undisturbed for about 5-7 minutes, or until the bottom is golden brown.

Flip and Cook: Carefully flip the hash browns using a large spatula. You might want to cut them into sections to make flipping easier. Cook on the other side for another 5-7 minutes until crispy and golden.

Add Toppings: Once the hash browns are cooked through, sprinkle the shredded cheddar cheese and diced bacon evenly over the top. Cover the skillet with a lid for 2-3 minutes to allow the cheese to melt.

Garnish: Remove from heat, and sprinkle the chopped green onions (and jalapeños, if using) on top.

Serve: Serve the loaded hash browns hot with dollops of sour cream on the side for dipping.
