1 pound boneless, skinless chicken breasts, diced

1 cup orzo pasta

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach, chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup crumbled feta cheese

2 teaspoons dried oregano

1 lemon, juiced and zested

Salt and pepper to taste

Fresh parsley for garnish

Cook the Orzo: In a large pot of boiling salted water, cook the orzo according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt, pepper, and oregano. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add a little more olive oil if necessary. Sauté the diced onion for about 3 minutes until softened, then add the minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: Add the halved cherry tomatoes to the skillet and cook for 2-3 minutes until they start to burst. Stir in the chopped spinach and cooked chicken. Cook until the spinach is wilted.

          Add Orzo and Flavor: Add the cooked orzo to the skillet, along with the sliced olives, lemon juice, and zest. Mix everything together thoroughly and cook for an additional 2-3 minutes on low heat.

            Garnish: Finally, stir in the crumbled feta cheese and adjust the seasoning with more salt and pepper if needed.

              Serve: Plate the orzo and chicken mixture, garnishing with fresh parsley for a burst of color and flavor.
