1 cup unsweetened shredded coconut

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup graham cracker crumbs

1/4 cup semi-sweet chocolate chips (optional)

Extra shredded coconut for rolling

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with a hand mixer until smooth and creamy.

    Add the unsweetened shredded coconut and graham cracker crumbs to the mixture. Stir until everything is well incorporated.

      Once the mixture is combined, use your hands to scoop out small portions (about 1 tablespoon) and roll them into balls.

        If desired, melt the semi-sweet chocolate chips in the microwave for about 30 seconds, stirring until smooth.

          Dip each ball into the melted chocolate, allowing any excess to drip off, or leave them plain if you prefer.

            Roll each ball in extra shredded coconut to coat. Place the finished balls on a parchment-lined baking sheet.

              Refrigerate for at least 30 minutes to firm up before serving.
