4 boneless, skinless chicken thighs

2 tablespoons olive oil

2 lemons (one for juice, one for slices)

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 red bell pepper, sliced

1 cup green beans, trimmed

Fresh parsley, chopped for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a bowl, combine the olive oil, juice of one lemon, minced garlic, oregano, thyme, paprika, salt, and pepper. Mix well.

      Marinate the Chicken: Place the chicken thighs in a resealable bag or a shallow dish and pour the marinade over them. Let marinate for at least 15 minutes (or up to 2 hours in the fridge for more flavor).

        Prep the Veggies: While the chicken is marinating, prepare the veggies. On a large baking sheet, toss the cherry tomatoes, zucchini, bell pepper, and green beans with a drizzle of olive oil, salt, and pepper.

          Arrange on Baking Sheet: Push the veggies to the sides of the baking sheet and place the marinated chicken thighs in the center. Arrange lemon slices on top of the chicken for extra flavor.
